These changes, the result of in-depth work shared with institutions and operators in the sector, were conceived to strengthen the protection of the PGI and improve the perception of one of the most representative products of Italian gastronomic excellence.
The main changes to the specification include a general revision of the specification, an update to the labelling principles and the introduction of the “Riserva” category for products aged for over 5 years.
In particular, the text of the production specification has been subjected to a comprehensive review to ensure clearer, more complete and easily interpretable legislation.
This update aims to simplify the reading of the rules, improve the management and traceability of the product, and make it easier for operators in the sector to apply the rules .
New labelling principles have been introduced, with the aim of valorising the toponym “MODENA”, underlining the provenance and tradition of a product which has its roots in this land.
The revised labelling protects consumers against the use of ambiguous expressions that risk undermining the guarantee of transparency.
One of the most significant innovations concerns the introduction of a new category of Aceto Balsamico di Modena PGI, the RISERVA category , dedicated to products that have aged for over 5 years .
This new denomination, which identifies a particularly valuable and high-quality selection, will allow producers to further differentiate their products on the market, expressing the excellence and long tradition of our vinegar.
The Riserva category , which will be officially presented in various locations over the next few months, represents a historic step because it introduces the concept of qualitative verticalisation based on the ageing period into the IGP range .
The possibility of tasting different vintages will give experts and enthusiasts the opportunity to appreciate the nuances and organoleptic differences that mature during the long aging periods in fine wooden containers, providing an immediate experience of the complexity that characterizes the varied world of Aceto Balsamico di Modena PGI.
