The ancient Venetian festival of the Redentore has welcomed a special partner for the 2024 edition, the Parma Ham Consortium. The large surface area of the Rialto fish market was transformed into a cheerful branded stage where entertainment activities based on live sketching, DJ sets, photobooths and, of course, tastings took place. A joyful atmosphere culminated with the fireworks that illuminated the Grand Canal for 40 minutes.

The Consortium's choice to fit into an ancient and modern context at the same time proved to be the right one, given the origin of Parma ham which takes us back two thousand years. “Cato the Censor spoke about it – explained Matteo Cavalli, head of the Consortium's press office and external relations -. Already then, hams were produced in the Parma area according to methods similar to those today. The protection and valorisation of the product began in 1963, the year the Parma Ham Consortium was founded.

Seven and a half million Parma hams were branded last year, and a huge number of activities - from production to packaging in trays - carried out within this area, all under the watchful eye of control bodies, including third parties , such as CSQA. “Our supervisors also monitor the way in which the product is marketed, in the domestic market and abroad – specified Cavalli -. The pigs come from 11 regions of the central north in which the certified farms are located, where there are checks on the animal's welfare, carried out by the national health authorities. Today the number of producers has risen to 130, and the current president of the Consortium, Alessandro Utini, was recently confirmed".
