Fontina DOP: changes to production regulations approved

The production specifications for Fontina DOP have been modified: CSQA confirmed as the control body, changes to the diameter of the cheese and the minimum percentage of fat, new moulds for the mountain pasture forms.

A communication regarding the approval of an ordinary amendment to the production specifications of Fontina PDO was published in the Official Journal of the European Union on 6 December.

The first changes concern the description of the product, and in particular the diameter of the shape which is now between 30 and 45 cm since within the previously foreseen limits (i.e. 35 and 45 cm) non-conformities were found as some shapes could have compliant weight and height with a diameter lower than the minimum foreseen.

An indication relating to the chemical characteristics was then eliminated , which required a minimum percentage of fat of 45% of the dry substance, a requirement introduced in the historical period that saw a large production of butter and cream and which today is no longer a critical point of production.
