Gallina Mario, a company located in Lagrimone , a hamlet of Tizzano Val Parma (Pr), has been operating in the cured meats sector since 1358. Its core business is the production of Prosciutto di Parma DOP, with a sales area that ranges from Italy to Europe. The sale of the renowned Prosciutto di Parma DOP occurs for over 50% of the product with the bone, destined for a significant portion to the normal trade channel and for the remainder to the large-scale retail trade, sold under the Gallina Mario brand, with other registered brands or with the distributor's brand (Mdd) of the brands.
Food Mania , on the other hand, is the slicing centre based in Pilastro (Pr) which was founded as a subsidiary of Gallina Mario about 10 years ago, expanding the range of sales formats: a quality service, which includes the logistical management of fresh products with a short shelf life, ensuring the maximum expression of the quality of packaged cured meats and cheeses.

Production takes place in new or renovated premises, larger and more suitable for the storage and care of the ham for the long seasoning. In these 65 years of activity, numerous improvements have been made to the structure and processes. Food safety and sustainability are top priority for the Gallina family.
“We have been dealing with IFS and BRC standards for years, certifications that are added to the more classic ISO 22000 and 22005 and voluntary certifications on products from the antibiotic-free supply chain from birth and animal welfare . The latter has been giving satisfaction in recent years, in fact the range of products without antibiotics from birth and animal welfare has recently undergone a re-branding, more attractive and clear. We are happy and will try to present the product to those who have still put up a bit of resistance due to the price”, continues Laura Gallina .
“ Food Mania is also IFS certified and is part of the supply chain in the other voluntary certifications. An additional guarantee that we provide to our customers and through which we demonstrate the seriousness of our work. Food Mania also has numerous active collaborations with certification bodies for the management of slicing of DOP and IGP products, first and foremost with Csqa for Parma ham and Salame Varzi, followed by Ecepa, Agroqualità and others”, he continues.
