From criticality to resource, at least from a food and wine point of view. The meat of the Colli's wild boars , already appreciated for the particularity of its flavour, compared to the more "strong" characteristics of the specimens from the Maremma, could become a new attraction for the already rich table of local products.
This is what the representatives of the tertiary sector propose, through Ascom Confcommercio of the walled cities of Lower Padua, to the Colli Park Authority. In short, for restaurant companies and the local food trade network, wild boar would find a much more congenial place for the local economy on the tables rather than in cultivated land.

The project for the promotion and qualification of the Colli wild boar, complete with quality mark , has been in the starting stages for years. And it will finally reach the finish line by next summer, when the Institute for Food Safety and Quality ( Csqa ) of Thiene will release the brand capable of certifying the traceability and healthiness of "native" meat.
However, for Ascom, the certification of zero kilometer meat and its "DOC" origin remains only the premise of the subsequent actions to be carried out.
