2024 was a year of great successes : the company achieved energy self-sufficiency, thanks to a new photovoltaic system, and invested in a significant renovation of its clean room, ensuring maximum safety of ready-to-eat food products.
Inside the clean room, tartare, tartare and carpaccio are processed in a highly controlled and pressurised environment thanks to forced air recirculation where powerful ventilation and filtering systems block the smallest particles and microorganisms, thus ensuring a safe working environment.
