
The Simonini family's history in the cured meats sector has distant roots and has grown over time, combining Trentino artisanal mastery with the evolution of consumer trends. Today, the old butcher's shop, with its 30 employees and a turnover of 9 million euros, has reached an industrial dimension: advanced production systems are combined with manual processes because "the artisanal care in the processing of meat has remained unchanged", states Grazia Bertè, CEO of the Trentino company, with satisfaction.

An evolution that was only possible thanks to the passion and in-depth knowledge of the trade, raw materials and meat transformation processes of both our specialized staff and our partners. In the Trentino company, attention to food safety is extremely high. Upon arrival, each item is checked and batched to ensure traceability throughout all production and marketing phases. Specifically, once the so-called Critical Control Points have been defined, the information is entered, recorded and analyzed online in the CSB-System, without interruption. At the same time, the CSB-System Batch Information System ensures the management of provenance and production data according to European standards. All qualities that have allowed Simonini to achieve prestigious food certifications such as IFS (International Food Standard) and DTP108 gluten-free by CSQA .
