Nostrano Valtrompia DOP, a historic mountain cheese produced from the milk of the Bruna Alpina breed in small local dairies, represents one of the excellences of Lombardy's dairy quality. In fact, Lombardy boasts 15 DOP, IGP and STG cheeses, with a production value of 1.65 billion euros in the sector (Ismea-Qualivita Report 2023).
The supply chain of this cheese has deep roots, documented since the sixteenth century, and maintains a niche artisan dimension. Today, with only 5 active operators, it produces approximately 6 certified tons per year in the 19 municipalities of the production area located in the province of Brescia (Data from the Protection Consortium and Ismea-Qualivita Report 2023).
Since 2014, the Consortium for the Protection of Nostrano Valtrompia has been working to safeguard and promote this excellence. Since 2017, it has made an ancient mine available for the maturing of cheese, where constant temperature and humidity guarantee a slow and unique refinement. This practice has become the fulcrum of a tourist experience that combines a visit to the mine with the discovery of production techniques and the deep connection between the territory, environment and local culture. During the summer season, the experience is often enriched with nature trekking activities.
The confirmation of CSQA, leader in Italy in the certification of Geographical Indications, demonstrates the commitment to quality and transparency, for the benefit of producers and consumers.
