Another important step towards the protected geographical indication for the Capocollo of Martina Franca: this afternoon at 17.30 in the Council Chamber of Palazzo Ducale what is technically defined as a "public assessment meeting for the PGI" is convened, i.e. a meeting in which the production specification of the typical cured meat of the Valle d'Iuta and in particular of Martina Franca will be read and which will be the basis for obtaining the European brand that will protect the production and typicality .
An important step, the first of a very complex path towards the PGI but which aims to identify one of the best known products of Martina Franca in the world, associating the quality and the production method to the place where an important part if not all of its production process takes place. A long journey that started four years ago, as explained to Quotidiano Francesco Carriero, local producer and food technologist who followed the process to obtain the European PGI quality mark.

Today's meeting will be open to the city and will represent an important stage in a journey that still appears long but fundamental to protect the salami so well known: "In the presence of two ministerial officials who have followed this process, the CNR technicians and the CSQA quality certification manager, the specification will be read in a meeting open to the city, operators and producers".
