The Parma Ham Consortium is taking the field directly to contribute to the path towards ecological transition not only of its 130 members but also of the entire Italian raw ham sector. And it does so with a multi-year project, launched in 2022 with the aim of defining an environmental policy at the service of producers.

Initiated and implemented together with the Politecnico di Milano , the consortium project reached its first step a few months ago: the development of a software – the first ever designed for a DOP product – that allows companies to standardize and systematize the procedures for calculating and reducing their environmental footprint. Through this software, developed by Enersem and verified by Csqa, producers can receive both the evaluation of their environmental performance and tailor-made indications for reducing their environmental footprint .
The software is the result of a project that lasted over two years to “map” the status quo, starting from the calculation of the environmental footprint of the sector using the official Pef (Product Environmental Footprint) methodology applied to around fifty companies and validated by the Csqa certification body.
