FAO & WHO publish 2023 edition of " General Principles of Food Hygiene . Codex Alimentarius Code of Conduct, No. CXC 1-1969 ".
The General Principles of Food Hygiene is the basic Codex document which describes the necessary food hygiene measures and food safety controls which should be understood and followed by food business operators at all stages of the food chain and which provide the competent authorities with a basis for overseeing food safety and suitability.
This edition contains a new annex that introduces tools for determining critical control points in a Hazard Analysis Critical Control Point (HACCP) system.
The update also includes modern concepts not addressed in previous releases, including the role of Good Hygiene Practices (GHP) which require further attention because they have a greater impact on food safety.
Codex standards are international food texts, i.e. standards, codes of practice, codes of hygiene practice, guidelines and other recommendations, established to protect the health of consumers and ensure fair practices in the food trade. The collection of food standards and related texts adopted by the Codex Alimentarius Commission is known as the Codex Alimentarius.
