
Salame di Varzi DOP aims ever higher . And after having obtained the recognition from the Ministry of Agriculture and Food Sovereignty of the production specification of the protected designation of origin (DOP), now the sales data are also recording comforting data.
According to CSQA (System and Product Certification Body) reports, certified production data shows an increase in 2024 compared to previous years . This positive result reflects the commitment of local producers who have continued to guarantee the quality and authenticity of the product.
In 2021, the weight of certified product was 671,551 kg, which decreased to 608,655 kg in 2022. In 2023, a recovery was observed to 635,583 kg, reaching 636,524 kg in 2024. Similarly, the number of certified salami increased from 703,289 in 2021 to 648,097 in 2022, rising to 673,199 in 2023 and 675,780 in 2024.
The community of producers of Varzi has demonstrated an extraordinary capacity for adaptation and innovation, continuing to focus on quality and excellence. Now, to promote the salami, the project “ Eccellenze DOP: un Savoir-Faire Tutto Europeo ” has begun, co-financed by the European Union and developed in collaboration with the Consortia Garda DOP, Salame di Varzi DOP, Crudo di Cuneo DOP and Formaggio Montasio DOP .
